Recipe: French Toast with Banana and Orange Syrup


- vegetarian 

- peanut free
- 20 minutes (max) to make
- can be eaten for breakfast or lunch


Ingredients:
1 Vienna loaf, café sliced
2 eggs
1 cup of milk
200 grams of white or caster sugar
200 mls orange juice
3 bananas, cut into eighths or 2 oranges, sliced into segments
1 T butter
icing sugar, to dust

Method:



1. In a heavy-based saucepan, melt a small amount of sugar and then add small amount at a time until all is dissolved and coloured light brown.  



2. Then lower heat and add orange juice until dissolved.
Pour over fruit in a bowl, then cool.





3. Beat eggs with milk in a shallow dish.


4. Soak bread in mixture until absorbed. 

5. Melt butter in frypan, then cook bread until golden. 













6. Flip when cooked.

7. Serve with fruit and syrup, then dust with icing sugar.

How to make breakfast Kedgeree


Breakfast Kedgeree (serves 4)

- vegetarian 
- vegan (when served without eggs)
- lactose free
- peanut free
- Indian
- 25 minutes to make
- can be eaten for breakfast, lunch and dinner

Ingredients

Olive oil
1 Onion, finely chopped
1 1/2 teaspoon of crushed red chilli
2 teaspoons of crushed ginger
1 teaspoon ground cumin
1 teaspoon ground turmeric
185 g long-grain rice
4 eggs (optional)
Lime Juice (to serve)
Salt and pepper (to serve)

Method:
Put a splash of olive oil in a large saucepan and sauté the onion, chilli, ginger and turmeric together for 3-5 mins until the onion is soft. Add the rice and cumin. Stir to coat the rice in the spice mixture. Add 600 ml of boiling water and simmer for about 20 minutes or until the rice is cooked and the liquid has been absorbed. During the last ten minutes, boil the four eggs. Quarter the boiled eggs. Serve with eggs, lime juice, salt and pepper.
